My mom's banana bread recipe and slow rainy days
I will be honest. I didn’t have it in me to write this week’s Setting the Table post. I planned to share a poolside lunch menu, and it’s a good one (I promise), however, it feels like summer is already starting to wind down. I am going to rework the post and share it next week as a lazy late summer dinner.
Today, I am sharing my mom’s Banana Bread recipe. It is a gray rainy, day in Asheville, and a rainy day always gives me the itch to bake. I had two bananas in my fridge, so it was the perfect thing to whip together. The recipe makes two loaves, so I halved the recipe and made one loaf that is currently baking in my oven.
So if you happen to also have a couple bananas in your fridge looking a little too brown, I hope that you will join me in baking a loaf of banana bread also.
